The forming machines can either be single-sheet to produce cappelletti, tortelloni and fagottini or double-sheet to produce ravioli of various size and shapes; in either case the shapes can be chosen in our catalogue or customized as of the producer’s imagination. Output depends on the machine strokes, on shape, weight and no. of the pcs, adaptable to width of the sheet pasta used.
The machines and their structure are entirely made in stainless steel or in other inoxydable, atoxic materials, suitable for contact with fresh foodstuff. All parts in contact with the product can be easily reached or disassembled thus enabling easy servicing and possible washing operations. Each group is equipped with electric panel fitted with PLC and operator panel enabling to check and store all machine capabilities in proper recipes.
The fresh, filled pasta lines are fully automatic, easy to start and operate: they can process either laminated or extruded sheet-pasta as of the Customer’s specific requirements.
Dough preparation can be effected either by an independent, continuous Mixer or by a continuous Mixer integrated in the Sheeter or in the Extruder. In both cases the machine is equipped with a Centrifuge pre-mixer where the ingredients are mixed and where two kinds of flours, water, eggs and possible microdosage of liquids and powder ingredients can be dosed in continuous and independently. The mixing basin enables perfect hydration of the dough mixture and integration of the scraps (sheet-pasta wastes) coming from the Forming machine. The sheet of pasta is obtained thanks to a Sheeter or Extruder working in direct coupling with the Forming machines, that are equipped with sheet-calibration groups, enabling independent adjustment of the sheet-pasta thickness. Filling is dosed by proper injectors equipped with air–injection device.
